As I was writing, Italian Moms – Something Old Something New, to be released in April 2018, I found it important to address the changing eating habits of my family. So I have taken some of my classics and given them a new twist, reducing the amount of flour, salt and time to make some my dishes. this recipe is easy and can be prepared in less them 30 minutes.
Ingredients:
- 3 chicken breasts – cubed
- 1 onion, pureed
- 3 garlic cloves, minced
- 1 tablespoon of olive oil
- 1 teaspoon all-purpose flour
- 2 pounds of white mushrooms
- 2 cups Marsala wine
- 1/2 cup of beef stock
- 2 teaspoons of salted butter, cubed
- Pinch of salt
- 1/4 cup freshly chopped parsley
- Pinch of black pepper
Directions:
Puree the onions, flour and olive oil together and place in a large skillet pan over medium heat. Add the chicken, garlic and mushrooms, salt and black pepper and saute for 5-7 minutes. Add the wine, stock, butter and parsley and mix throughly. Cover and allow to cook for 20-25 minutes. Mix occasionally. Add more stock if dry. Serve with some white rice and simple string beans and garlic.
